This Coconut milk palm sugar jelly dessert is a fantastic summer treat that is refreshing and hydrating. These jellies are made only with 6 ingredients. Written recipe below.....
Recipe:
To make coconut milk layer:
400ml coconut milk
1/2 tsp salt
2 tsp agar agar powder
To make palm sugar layer:
150g palm sugar
400ml water
2 tsp agar agar powder
2 knotted pandan leaves
Method:
1.) In a saucepan whisk together the coconut milk layer ingredients. Bring to boil and then simmer over low heat. (Keep over low heat to prevent the liquids turn into solid).
2.) In an another saucepan whisk together palm sugar layer. Bring to a boil and then simmer over low heat. (Again ensure to keep over low heat to prevent the liquids turn into solid)
3.) Pour the 1/4 cup coconut mixture into a square glass bowl. Allow this to set at room temperature. Check with your finger to see if the layer is set. ( the surface should feel slightly tacky). Once the coconut layer is set, slowly pour palm sugar layer on top.
4.) Repeat this process until you use up all the mixture.
Let it set in the fridge for at least 2 hours. Remove the jelly form the glass bowl and cut into small pieces and enjoy.
