▷Ingredients (ø18cm)
300 g bread flour
35 g sugar
6 g salt
5 g instant dry yeast
1 whole egg + milk = 175g
30g unsalted butter
▷How to make:
1. In a bowl, mix together the flour, sugar, salt, and instant dry yeast.
2. Add milk to 1 whole egg and measure 175g, add to ① and mix.
3. Knead until the dough comes together. Add unsalted butter and knead until the butter is incorporated.
4. Cover the dough with a lid to prevent it from drying out and let it ferment at room temperature for about 1 hour until it doubles in size.
5. Release the gas and divide the dough into 9 equal portions (60-61g per portion). Roll out the surface of the dough, cover with a wet cloth and let rest for 15 minutes.
6. Line the mold with a cookie sheet. Let the dough degas once again, roll it out neatly, and place it in the mold. Ferment at room temperature for 50 minutes to 1 hour until doubled in size.
7. Sprinkle lightly with flour and bake in a preheated oven at 180℃ for 18-23 minutes.
